Baked Pasta Alla Norma with Creamy Boursin

I am sure everyone has heard about the viral baked feta pasta at this point, and if you haven't you should definetely try it out. This pasta dish is a spin on that but slightly elevated and just bursting with flavour.

Pasta alla norma is an italian dish made of pasta and eggplant. In this version I add cherry tomatoes, roasted red peppers, boursin and tons of fresh basil and garlic. The flavours are truly incredible. And for anyone who is not an eggplant lover, give this recipe a go! You may be surprised. The eggplant and cherry tomatoes are roasted in the oven with chili flakes and summer savoury until they are juicy and perfectly caramelized. the boursin bakes right along side the vegetables and becomes so melty and creamy. Once the eggplant, tomato boursin mixture comes out of the oven, I add fresh basil and garlic and the smell is so incredible! The heat from the tomatoes and eggplant ever so slightly cook the garlic and basil until they are unbelievably fragrant. Add your favourite type of pasta to the pan and stir to combine. This is such a wonderful meatless meal that comes together in under 30 minutes. It is so simple, yet such a crowd pleaser, it is equally as perfect for a weeknight meal as it is for a dinner party. Serves: 4 people

Total Time: 30 minutes


INGREDIENTS:

2 small eggplants, cubed

1 ½ cups cherry tomatoes

1 150g package of garlic and herbs boursin

¼ cup olive oil

1 teaspoon chili flakes

3/4 cup roasted red pepper, sliced

1 teaspoon of summer savoury or oregano

Good pinch of salt and pepper

2 cups dry pasta

2 tablespoons basil, julienned

2 cloves of garlic, minced





INSTRUCTIONS:


Preheat the oven to 400 degrees fahrenheit


In a roasting pan, add the eggplant, cherry tomatoes, roasted red peppers, summer savoury, chili flakes, salt and pepper. Stir to combine. Nestle boursin in the middle of the vegetables and drizzle everything with olive oil. Bake in the oven for 20 minutes until the vegetables are golden brown and cooked through, and the boursin has melted.


While the vegetables are roasting, cook your pasta according to package instructions.


Once the vegetables are done, add the fresh basil and garlic. Stir everything to combine. The cherry tomatoes should crush easily and mix with the boursin to create a creamy sauce. Add the pasta to the sauce and stir once more. Salt and pepper to taste. Garnish with fresh cherry tomatoes, more basil and some parmigiana. Enjoy!
