There are hundreds if not millions of chicken salad recipes on the internet but if you have never added fruit and curry powder to your chicken salad than you are truly missing out. The sweet and salty combination of apple, curry and onion, paired with the creamy mayonnaise is outstanding.

This recipe is so versatile and simple to put together. Start with some grilled chicken breast or dark meat - both work well. Feel free to use rotisserie chicken to skip a step. The sauce consists of mayonnaise, dijon, basil, green onions, curry powder and salt and pepper. A few simple ingredients that are mostly kitchen staples. Many of the ingredients can be substituted so just use what you have! Greek yogurt or sour cream are often great substitutes for mayonnaise. Cilantro, parsley, oregano will all work in lue of basil. And any type of mustard and onion should work as well.
The add ins consist of celery, apples, and some radish for garnish. Cucumber or bell peppers would taste delicious as well. And if apples aren't your thing, Try some grapes or blueberries instead! As you can see, this recipe is so versatile and can really be made with ingredients you mostly have on hand.
I love making this chicken salad for a great make ahead lunch. It lasts for about 3 -4 days in the fridge and can be served as a sandwich, lettuce cups or on top of lettuce as a salad. I hope you enjoy!๏ปฟ

INGREDIENTS:
2 large chicken breasts, roughly chopped
2 heaping tablespoons of mayonnaise, plus more if needed
1 green onion, finely sliced
2 tablespoons of basil, julienned
½ cup apple, finely diced
¼ cup celery, finely chopped
1 teaspoon dijon
1 teaspoon curry powder
Pinch of salt and pepper

INSTRUCTIONS:
Simply add all of the ingredients to a medium sized mixing bowl and stir to combine. Start with two heaping tablsepoons of mayo and add more as needed. The amount is really personal preference! Season with salt and pepper to taste and serve on a toasted bun or croissant, or as a salad on top of lettuce. Enjoy!
