Bocconcini Stuffed Meatballs

Are you ready to enjoy the best meatballs that you have ever made? I know this a bold statement but trust me when I say this. These meatballs are epic.

The combination of italian sausage, ground beef and bacon add a texture and flavour like no other! First seared at high heat in the oven and then slow cooked in marinara. I use a jarred marinara in this recipe because quite frankly there are some pretty amazing sauces on the market and I don't find that it is worth making your own. With that being said - feel free to use homemade marinara if you have some on hand! My favourite jarred sauces are either White linen from costco, or Rao's. Both are excellent.


These meatballs are fantastic served on a ciabatta bun or on spaghetti. The surprise bocconcini in the centre is the icing on the cake! The cheese is perfectly melted and oozes out when you take a bite. I can't wait for you to experience the magic of these meatballs and I hope you enjoy them as much as I do!




Serves: 4 - 6 people

Total Time: 60 minutes



INGREDIENTS:

1 - 1.5 lbs of ground beef

1 italian sausage (mild or hot), casing removed

3 rashers of bacon, cooked and finely chopped

½ cup milk

½ cup italian breadcrumbs

¼ cup fresh basil, finely chopped

1 egg

½ cup grated parmigiana reggiano

10-12 bocconcini balls

1 jar of marinara (about 650 ml)


INSTRUCTIONS:

Preheat the oven to 425

In a medium bowl combine the meat, bacon, milk, breadcrumbs, fresh basil. egg and parm. Use your hands to combine fully.

Flatten about 2 tablespoons of the mixture in your hand and place a bocconcini ball in the centre. Wrap the meat around the ball and form into a meatball shape. You should get 10 -12 meatballs

Spray the baking dish with cooking spray or drizzle with olive oil and arrange the meatballs, ensuring that there is space in between them

Bake the meatballs for 15 minutes

Remove from the oven and reduce the temperature to 350. Pour the marinara sauce around all meatballs and place back into the oven for an additional 20 - 25 minutes. 

Sprinkle with fresh parm and basil and enjoy!
