Fresh Fig Flatbread with Blue Cheese, Ricotta, Arugula and Hot Honey

This fresh fig flatbread with blue cheese, ricotta, arugula and hot honey is out of this world. Sweet and salty, creamy and crispy - it truly hits all the flavour and texture notes.

It is no secret that hot honey is pretty much my favourite condiment. It just adds such a depth of flavour and elevates any dish. You can really never go wrong with the sweet and salty combination and adding a touch of spice to that combo takes it to a whole new level. The salty element of the blue cheese and the peppery arugula pair so well with the sweet figs and hot honey.


This flatbread is made using store bought pizza dough. I find that the trick to getting a super fluffy flatbread is to let the pizza dough rise outside of the fridge for about 45 minutes to an hour. This makes the dough very bubbly and creates a much lighter end result compared to regular pizza. Feel free to make your own dough but honestly store bought can be just as good! Often times the best dough comes from a local pizza shop or italian grocer.


This flatbread makes for the perfect appetizer or main dish. Serve with a nice side salad and you have a perfect meatless meal. Enjoy!



Serves: 4 people

Total Time: 35 minutes


INGREDIENTS:

1 ball of store bought pizza dough (about 750g)

2 fresh figs, cut into small wedges

1 tablespoon fresh basil, julienned

½ cup fresh ricotta, mixed with a pinch of salt and pepper

โ…“ cup crumbled blue cheese

1 handful of arugula

Hot honey to drizzle


INSTRUCTIONS:

Remove the pizza dough from the fridge and let it rise for about 45 minutes until there are a fair amount air bubbles and the dough feels light and bubbly

Preheat the oven to 450 degrees fahrenheit

Drizzle a 12 inch cast iron skillet with olive oil and preheat over medium heat

Stretch out your pizza dough to 12 inches and transfer it to the preheated skillet

With the stove top still on, begin adding your toppings, starting with the ricotta, then adding the figs and blue cheese

Bake the flatbread in the oven for about 12 - 15  minutes until the crust is golden brown and the cheese is bubbly. Timing will vary based on the thickness of your flatbread

Once cooked, remove the flatbread from the oven and add the arugula, fresh basil and a generous drizzle of hot honey

Cut into slices and enjoy!
