I am in full spring mode and craving all the fresh spring flavours. Most days it still feels like winter outside but with these herby spring salmon bowls, I can at least pretend that the temperatures are above zero!
This bowl is the perfect meatless meal and comes together in under 30 minutes. It is quick, nutritious and bursting with bright flavours, and best of all, can be prepped far in advance making it a perfect recipe to meal prep for lunch or dinner.
To me, peas, asparagus and lemon are synonymous to spring. I crave the bright flavours and when paired together, they make such a delicious combination. I used steelhead salmon from BC, which is one of my favourites. If wild salmon is unavailable, I try to opt for a sustainably farmed fish instead. Fresh dill and cilantro work so well in this dish, but feel free to try some other herbs. Basil, thyme, rosemary...the possibilities are endless. Broiling the salmon at the end creates these perfect crispy bites that are so juicy. The hot honey in the marinade caramelized and helps to form this incredible crispy crust on the salmon. Feel free to pair this dish with whatever grain and vegetable you are feeling like. Rice and asparagus work well, but quinoa, israeli couscous, brocoli or green beans would all be delicious. Serves: 3 - 4 people

INGREDIENTS:
For the Herby Salmon Bites:
1 tablespoon olive oil
Zest of one lemon
1 tablespoon finely chopped dill
1 tablespoon finely chopped cilantro
2 teaspoons of hot honey
1 teaspoon dijon
1 teaspoon grainy mustard
1 teaspoon fish sauce
½ teaspoon pepper
1 pound of salmon, skin removed, diced into bite sized cubes
For the Mango Pea Salsa:
2 mangoes, finely diced (the smaller yellow ones)
1 green onion, thinly sliced,
โ cup frozen green peas (thawed in the microwave according to package instructions)
Juice of 1 lime
¼ cup finely diced onion
2 tablespoons cilantro
1 tablespoons olive oil
Pinch of salt and pepper
INSTRUCTIONS:
For the Herby Salmon Bites:
Preheat the oven to 425 degrees fahrenheit
Add all the ingredients in a medium bowl and carefully mix to combine
On a parchment lined baking sheet, spread out the salmon pieces so that none of the pieces are touching
Bake for 8 minutes until just tender
Broil the salmon for an additional 2-3 minutes until golden brown and slightly charred. Watch carefully in the last minute as the salmon can burn quickly
For the Mango Pea Salsa:
Combine the ingredients in a medium bowl. Set aside until ready to serve.
Assembly:
Start assembling the bowls with a serving of rice on the bottom, followed by some roasted asparagus and the salmon bites. Top each bowl with the mango salsa and garnish with fresh cilantro and dill
