One pot pasta meals have been trendy for quite some time now. To be honest, I have always favoured the traditional method of making pasta. That is until I hopped on the trend, and while I still love cooking my pasta in boiling salted water, one pot meals are quickly becoming a favourite. I love how the flavours develop while cooking everything together, and the rich creamy sauce from the starch in the pasta. It is truly a work of art!
This dish is so creamy and slightly spicy from the chili flakes. The rich and flavourful italian sausage adds another dimension to the classic penne alla vodka. The addition of spinach makes for the perfect well rounded meal. Pasta, protein and vegetables; what more could you ask for!
Serves: 4 people
Total Time: 40 minutes
INGREDIENTS:
1 shallot, finely diced
1 lb italian sausage (casings removed)
1 clove of minced garlic
¼ cup vodka
2 cups dry pasta
1 cup marinara
1 ½ cups of milk
1½ cups of water/chicken stock
¼ teaspoon chili flakes
A pinch of salt and pepper
2 handfuls of spinach
½ cup freshly grated parmigiana
INSTRUCTIONS:
Brown the sausage in a medium sized saucepan over medium heat. Using a wooden spoon, break apart the sausage until you have small crumbles. Once the sausage is golden brown, about 5 - 7 minutes, drain the excess fat.
To the saucepan, add the shallot, garlic and chili flakes and cook for two minutes until fragrant.
Deglaze the pan with vodka and stir until the liquid has evaporated
Add in the water/chicken stock, marinara, milk, dry pasta and a pinch of salt and pepper. Stir to combine.
Cook on medium/low until the liquid has mostly evaporated, the pasta is cooked through and you are left with a creamy, thick sauce. About 20 - 25 minutes. If the liquid is taking too much time to evaporate, turn the heat up slightly.
Add the spinach and fresh parmigiana and stir to combine.
Cook until the spinach has just wilted and the parmigiana has melted
Season with salt and pepper to taste and enjoy!
