Spinach Artichoke and Bacon Dip

What is not to love about the classic spinach and artichoke pairing? The salty artichoke hearts, mild spinach and nutty gruyere make for the perfect combination...now add in the bacon and you have got something seriously special!

A warm dip is a go to for me when it comes to entertaining. It is a perfect make-ahead appetizer that is always a huge hit. You can make this dip up to three days in advance and simply cover and refrigerate until you are ready to bake it.  You can even freeze this dip for up to three months and simply thaw and bake when you are ready to enjoy it. Perfect for those last minute dinner parties!


The cream cheese and mayo make for the creamiest dip, and work as the perfect backdrop for the stronger flavours in this dish. The mild cream cheese pairs so well with the artichokes bacon and nutty gruyere. I think this dip is paired best with some warm and crispy naan triangles. Cut your store bought naan into triangles and spread them out on a baking sheet. Drizzle them with olive oil, salt and pepper, and some dried herbs and bake them at 400 degrees fahrenheit until they are starting to brown. About eight minutes.  Simple as that!




Serves: 4 - 6 people

Total Time: 45 minutes



INGREDIENTS:

1 clove of garlic, minced

1 tablespoon butter

2 handfuls spinach, roughly chopped

1 cup of cream cheese

โ…“ cup mayo

3 rashers of bacon, cooked and chopped

½ cup chopped artichoke hearts

โ…“ cup gruyere cheese

a pinch of salt and pepper



INSTRUCTIONS:

Preheat your oven to 375 degrees fahrenheit

In a medium skillet, saute the spinach with butter and garlic until just wilted, about 2-3 minutes on medium heat

In a medium sized mixing bowl, combine the cream cheese, mayo, bacon, artichoke hearts, gruyere and salt and pepper

Add the spinach to your mixing bowl and stir to combine

Spray a 4 inch baking dish with cooking spray. I love using a mini cast iron skillet

Bake for 20 minutes until the cheese in melted and the top is golden brown

Serve with warm pita triangles or crispy tortilla chips and enjoy!
