Let me tell you - this may be the best potato salad I have ever had. I know that is a bold statement but this salad is a perfect balance of flavours. Slightly sweet, salty, creamy, and has a hint of spice.
Unlike the classic North American potato salad that is mayo based, german potato salad has a delicious vinaigrette and is served warm. The vinaigrette consists of red wine vinegar, bacon fat, dijon, fresh herbs, green onions and hot honey. The flavours are simply outstanding. The warm bacon, paired with the creamy baby potatoes and the bright red wine vinegar is such a delicious combination.
This salad is elegant enough to serve alongside a roasted beef tenderloin or nut crusted salmon, but works just as well as a unique side dish at your next backyard bbq. So next time you are making potato salad, try something slightly different with this warm german potato salad and I can assure you that you will not be disappointed!
Serves: 4 people
Total Time: 40 minutes
INGREDIENTS:
2 cups of baby potatoes, halved
4 rashers of bacon, roughly chopped
¼ cup roughly chopped parsley
1 sliced green onion
1 tablespoon dijon
1 ½ tablespoons red wine vinegar
Salt and pepper to taste
1 tablespoon hot honey
INSTRUCTIONS:
Bring a large pot of water to a boil, and cook the potatoes until tender, about 15 minutes. Drain and set aside.
In the same pot, cook the bacon until golden brown.
Turn off the heat, leaving the fat in the pot and add the dijon, red wine vinegar, a pinch of salt and pepper, honey, green onions and parsley. Stir to combine.
Add the potatoes back into the pot and stir everything together
Serve warm or room temperature and enjoy!
