I have always loved a good vegetable soup and this cream of asparagus soup does not disappoint! Full of fresh spring flavours with the asparagus and lemon, yet cozy and warm for these lingering wintery days.
I usually get my inspiration for recipes by looking in my fridge and seeing what ingredients need to be used up. This week, I had an abundance of asparagus - clearly I was in the spring mood while grocery shopping. I was craving something warm yet bright and fresh and the thought of cream of asparagus soup seemed to satisfy both those cravings.
This soup has minimal ingredients and is quite simple to make. The pairing of the asparagus, fresh parmigiano and lemon is truly special and I can't wait for you to enjoy this comforting dish as we wait for spring to come!
Serves: 4 - 6 people
Total Time: 45 minutes
INGREDIENTS:
2 bunches of asparagus, about 4-5 cups roughly chopped
1 onion, roughly diced
2 tablespoons butter
3 cups of chicken stock or veg stock
Salt and pepper to taste
1 teaspoon summer savoury
1/2 cup heavy cream
1/2 cup feshly grated parmigiano reggiano
Zest of 1 lemon
Pinch of nutmeg
INSTRUCTIONS:
Melt the butter in a medium sized saucepan and saute the onions until they are just starting to brown
Add the asparagus, summer savoury, chicken stock and a good dash of salt and pepper to the saucepan.
Simmer on low for 30 minutes until vegetables are very tender
Transfer the mixture to a high powered blender and blend on high until smooth
Return to the soup to the saucepan and heat on low.
Add the parmigiano, cream, lemon zest and a pinch of nutmeg to the saucepan. Simmer on low until the cheese has melted and the soup is heated through
Season with salt and pepper to taste and enjoy!
