Apple Crisp

I am so torn between an apple crumble and an apple pie. I love the crispy, crumbly topping of a crumble, but equally enjoy the butery, flakey crust of an apple pie. So I decided to combine the two. This Crisp has a flakey pastry shell and a crumble oat topping...best of both worlds!

This crisp is loaded with yummy, cozy flavours like nutmeg, cinnamon and brown sugar. The apples are very thinly sliced and almost melt together as the pie bakes. I love serving this warm with vanilla ice cream or whipped cream but my absolute favourite way to enjoy apple pie is with sharp imperial cheese. Sounds weird but it is absolutely delectable! If you are a fan of apple and cheddar as a snack, you will absolutely love the combination of apple crisp with imperial cheese.


You can use any type of apple for this crisp. I love a granny smith apple which adds a lovely tartness. Royal gala works extremely well too and is a tad bit sweeter. Feel free to make your own pie crust as well, but in all honesty, I love using tenderflake pie crusts. They are so flakey and buttery there is no need to make your own crust!




Serves: 6 - 8 people

Total Time: 45 minutes


INGREDIENTS:

1 tenderflake pie crust, deep dish or regular

6 - 7 small apples, or about 4 cups, peeled, cored and very thinly sliced

Juice of 1 lemon

1 tablespoon flour

2 tablespoons sugar

1 teaspoon cinnamon

¼ teaspoon nutmeg


CRUMBLE TOPPING:

¼ cup flour

¼ cup old fashioned oats

3 tablespoons cold butter

½ cup brown sugar

½ teaspoon cinnamon

Pinch of salt





INSTRUCTIONS:

Preheat oven to 400 degrees fahrenheit

Place the tenderflake pie crust into a pie dish and poke the bottom a few times with a fork

Peel, core and very thinkly slice the apples.

Add the apples into a medium sized mixing bowl along with the lemon juice, flour, sugar, cinnamon and nutmeg. Stir to combine.

Carefully add the apple mixture into the pie crust and distribute evenly


For the Crumble topping:
Combine the crumble ingredients in a bowl and, using a pastry cutter or two forks, cut the butter into the mixture until it reaches pea sized balls.

Evenly distribute the crumble on top of apples

Bake at 400 for 10 minutes and then reduce the temperature to 350 degrees fahrenheit and continue to bake for 20 - 30 minutes until the apples are tender and the crisp is golden brown

Serve warm with ice cream, whipped cream or imperial cheese and enjoy!
